Arctium lappa, commonly known as greater burdock, edible burdock, lappa burdock, or giant burdock, is the plant that produces those annoying burrs which get caught in clothes, fur, and even skin. Its roots, leaves, and stems are edible as well as its germinated seeds which can be eaten like bean sprouts. The roots are almost 50% inulin which is a starch that human bodies do not digest[1]. Thus, the roots can be used to give a sense of fullness without being a source of too many calories. It can cause gas in some people.
